Pesto Pasta Salad Recipe | Vegetarian Lunch

Today I've got a pesto pasta salad recipe for you! It's not so much a recipe, as an ingredients list because it doesn't require a great deal of cooking, but it's delicious nonetheless. It's a vegetarian recipe (so long as you use pesto that doesn't contain parmesan) and can be tailored to your tastes, for example you could add some onion, some chicken, some pepper, whatever you feel like!

So, here we go, let's make something simple, easy and delicious.

Lovely, tasty, healthy goodness


2 handfuls of your favourite pasta shapes, cooked and cooled (I like the swirly ones, like Fusili or Bucati)
6 Cherry tomatoes, halved
6 Mozzarella balls, halved
1 tbsp Pine nuts, toasted
3 handfuls Baby Spinach, torn
1 tbsp Pesto (Fresh, Jar or Homemade, whichever is easiest)
(obviously you can multiply these up depending on how many servings you're making)


1. Easy peasy- just combine them all in a bowl! I tend to mix the pesto with the pasta, then add all the other ingredients. If you were feeling fancy, you could drizzle over some olive oil, but it's not completely necessary.

And we're done! I love having this for lunch at work, or as a side salad for dinner. Sometimes I put in feta instead of mozzarella, or use salad leaves instead of spinach. It all depends on what you have in your fridge. Enjoy!
